Organ recording for Octave

I was glad when Octave “left the studio” and recorded a pipe organ, I will get this when its released. As an organ “nerd” of many years, both in the recording of them and just listening to the music. I was just wondering why that particular instrument was chosen, instead of a glorious acoustic in a cathedral type acoustic (of which we have a few here in the UK)?
