Interesting list! But I would certainly consider Joni Mitchell “mainstream and famous”! Or maybe you’re too young to remember her back in the day.

But it does not matter, it is a fun mix.
Remember, mainstream does not necessarily mean good or bad - just popular. There are many well-known artists who are superb at what they do.
Not “a singer/songwriter” per se, though he has written excellent songs he tends to sing the work of others. . . but I put the wonderful pianist and singer Andy Bey out there for consideration in the listing.
One who I know and is little known is Susan Werner. She plays piano and guitar (not at the same time) and writes some excellent songs. Susan is classically trained as an operatic singer but before entering that world professionally she decided to do her own thing and became a singer/songwriter. I say that she is well worth auditioning and may even convince you to buy a few of her albums.
