Never been to Axpona but I set up an Office for my employer at Remington Road in Schaumburg. That close to the conference Hotel. But going down town Chicago is definitely worth it too. I’ve also been to the Shedd Aquarium it is an experience.

You love whisky :tumbler_glass: right? Funny thing is, there is a place called Highland Park along the shore of Lake Michigan, 40 min from Schaumburg, also a nice place.

Yes, Highland Park! They are a pretty famous brand. I just may take that drive to go check it out. On a similar note, we are having our ground breaking ceremony for my distillery on March 26th! Been a long time in the works and super exciting to have gotten to this point.

We will be a “still pub,” with a restaurant and cocktail bar so we aim to base the majority of our signature cocktails on our own spirits. We will specialize in American single malt whiskey and brandy, but will produce a variety of vodkas, gins, rums, and of course, Bourbon.

My head distiller is experienced in making all of the above.

it’s a great concept. Seems difficult to pull off given the ageing time required. I’ve yet to enjoy a great bourbon or rye that was aged two years or less. My latest attempt was a two year 10th Mountain Division Rye aged for two years. I tried it at their sampling room in Vail. It’s just okay.

I will say, they mix cocktails there and age them in small oak barrels. I had a Sazerac aged this way and it was outstanding! Best I’ve ever had, and I’ve tried a few.

Seriously, good luck to ya. It’s a hot marketing segment and I’ve enjoyed most of the “still pubs” I’ve tried. If I’m ever in Anaheim, maybe to catch an Angels/White Sox game, I’ll give your place a visit.

The reason I am going the still pub route, rather then the more traditional distribution-based distillery model is for the reason you mentioned. Distribution sales only require such an enormous amount of capital upfront before you can even begin to sell your product (unless you focus only on un-aged spirits, which would be silly considering the demand for whiskey in the U.S.). With our full service cocktail program and the ability to sell retail, direct-to-consumer, we can bring in plenty of cash through retail sales while are colored spirits are aging.

This is an even better one, two Neopolitan brothers who ship in all the ingredients direct from Italy. Might be a problem at the moment. Not central but near a tube (20 minutes direct from Picadilly Circus), Kilburn is a bit grim, but well worth the short trip.

If it’s a Chicago thing you eat it in or around Chicago. TexMex is also poison in Europe.

I am afraid it is difficult to judge if you did not get the real high cholesterol infested pizza. :roll_eyes:
But it tastes good, once a year.

I do like the real Italian food too, but either in a good restaurant as you recommended or in Italy.

Nice thing about traveling is that you get to taste the original food, not the recipes translated to taste of different cultures. Some do a real good job some don’t. But nothing beats being there.

Sure you know that with your African and Asian travels.

Food is an important part of culture like music, I love it.

You are correct. When we travel I do the hotels and my wife does the food. She takes her research very seriously, through her global network.

Italy is the world centre of food and we’ve been there dozens of times. We made one accidental amazing find in Rome, the best home made pasta in our lives, the owner’s wife has a table and makes the pasta in the middle of the restaurant, in the morning for lunch and in the afternoon for dinner.

Funny stuff Beef. I hail from Highland Park (IL) and enjoy HP scotch very much as well.
Chicago is nice in the summer (as you know) and a PSA forum related meet and greet could be interesting.
Maybe an after show day hook up could work with those interested. Better than blindly lurking
at the hotel bar. Putting faces to the forum figures ( rock star that you are) would be a hoot.
Damn the curmudgeonism, we ain’t dead yet!

Well, I do hope it has subsided by then. I’m glad to see companies taking it seriously. One of my clients just cancelled their spring convention, as well as all travel; and the NAB was cancelled today. The National Assn. of Broadcasters annual show in Vegas is one of the biggest things in my industry - they use the entire 5Ms.f. of the LV Convention center. In both cases, these are conventions that attract visitors from all over the globe, so being responsible about it is good to see.

Now my only current dilemma is whether to go to a big general admission Dwight Yoakam show tomorrow night in Denver🤷🏻‍♂️
